A Curry to Cook At Home

Mixed Vegetable Curry 


  • 1 small onion 
  • 1 garlic clove 
  • 1 small piece ginger 
  • 1/4 tsp cumin seeds 
  • 1/4 tsp coriander seeds 
  • 1/4 tsp turmeric powder 
  • Chili & salt to your taste 
  • 2 Tbsp oil/ghee 
  • 2 tomatoes or 1 small can of tomato sauce 
  • 2 small carrots
  • 1/2 head of cauliflower 
  • 1 small zucchini 
  • 1 tomato 
  • cilantro  for garnish 


Dice the onion, chop garlic & ginger. Add oil to a medium sized pan/pot. Sauté onions, ginger, garlic, cumin and coriander until onions become glassy. Add the rest of the spices fry for another minute. Add diced tomatoes. Fry for 2 minutes. If needed at a little water. 

Cook for 4 minutes. Add sliced carrots and cauliflower pieces.  Boil on medium heat until carrots & cauliflower are 3/4 way cooked. Add chopped Zucchini & sliced tomatoes. Cook for another few minutes. Garnish your dish with fresh cilantro. Done. 
This dish can be eaten with Rice, Naan or just simply toasted bread.
